- Rolled & Sheeted – Centuries old kneading & sheeting methods used to create pasta with an authentic homemade flavor and texture.
- Never Extruded! – Rolled into a thin continuous sheet and then cut into pasta ribbons.
- Portioned – Long pastas are packaged four 4-ounce portions per one pound with 10 one-pound packages per case.
- Pasta Sheets – Both Ravioli and Lasagna style sheets are packed with parchment sheets between layers to prevent the sheets from sticking together.
- Cook to Order – Ready to serve in 2 to 6 minutes, no need to pre-cook.
- Vacuum Sealed – Gas flushed to protect freshness, moisture & flavor

- Never Extruded! – Our dough is sheeted through a series of rollers to form a continuous sheet that is then cut into pasta ribbons. Mass produced extruded pasta cannot compare to the taste, texture and quality of our rolled & sheeted egg pasta.
- Slowly Dried – Slow drying is the key to retaining the natural flavor, texture and nutrients resulting in pasta with a coarser texture to better hold your sauce.
- Quality & Consistency – The superior quality of fresh pasta with the handling, shelf life & storage advantages of dry pasta.
- Cook to Order or Pre-Cook – Cooks in just 2 to 8 minutes, quick enough to cook to order or pre-cooked, portion & hold under refrigeration for up to 5 days.

We can custom make proprietary pasta in fresh, dry or frozen. Mama Mucci's is large enough to meet your needs yet still small enough to produce small batches with lower case minimums than larger companies.
